They use a 170+ year old starter for a tried and true, consistent starter. Most customers say they can begin to activate their starter on a Friday and it's ready to use Monday afternoon! San Francisco-style sourdough is known for its crisp, chewy crust and tangy, complex flavor. This signature taste comes from the unique wild yeast and bacteria in the region, particularly Lactobacillus sanfranciscensis, which thrives in the cool, foggy climate. With a long fermentation process, it develops a deep, slightly sour flavor and a soft, airy crumb, making it a beloved classic among bread enthusiasts.
